*Black Bean Squash Veggie Burgers*

Squash and black beans make a super combo! This is one of thee best tasting veggie burger recipes. I love squash and beans so the combo together turned out pretty yummy. This squash burger is really filling and will last you a couple days depending on how many patties you make. Enjoy my loves♡

*Black Bean Squash Burger* Servings size: 6-8 Patties
Ingredients: (all organic)

1 Medium Sized Squash
1 Organic 15 oz Can Of Black Beans (Rinse really well + Drain)
1/3 Cup Organic Black Rice
2 Jalapeño Peppers (Rough Chopped)
3 Garlic Cloves (Grated)
1/3 Cup Red Onions (Rough Chopped)
1 Cup Of Panko Bread Crumbs
1/2 Tsp Onion Powder
1/2 Tsp Garlic Powder
1/2 Tsp Smoked Paprika
1/2 Tsp Chili Powder
1/2 Tsp Coriander
1/2 Tsp Black Pepper
1/2 Tsp Himalayan Pink Sea Salt
2 Dashes of Cumin
Toppings: Organic Mustard,Organic Ketchup, Romaine Lettuce, Tomatoes, Onion, Avocado
Optional: Add pickled jalapeños + vegan mayo etc

Directions:
1. Place Squash with skin inside preheated oven 365 degrees for 5 mins
2. Remove squash from oven + slice off all skin + remove seeds
3. Rough chop squash into squares + evenly coat with coconut or olive oil
4. Place squash in oven + bake for 35 mins (until soft + golden brown)
5. While squash is roasted add your rice to pan + 1+1/2 cup water + boil for 25 mins
6. Grate garlic + rough chop onions+ jalapeños + rinse +drain beans while rice + squash are cooking
7. Once squash is finish allow to cool 5 mins + rinse rice + add squash + rice to food processor
8. Next add beans + 1/2 cup panko crumbs +all ingredients including seasonings
9. Pulse all ingredients together until blended with a chunky consistency (don’t process to fine)
10. Make sure ingredients stick together + preheat pan on med heat with olive oil
11. Add the other 1/2 cup of panko crumbs after you finish processing this gives a crunchy texture
12. Take 2 tbs of patty mixture + press flat in hand to shape patty + allow to fry for 4mins
13. Once brown + crisp flip patty and allow to cook additional 4-5 mins on opposite side
14. Place one patty on plate + add lettuce +tomato+ mustard + ketchup + another patty on top
15. Add avocado + tomatoes + onions+ mustard drizzled on top + toppings of choice.
Note: You can also mash all ingredients together if you dont have a food processor or for a chunkier texture patty. What ever you prefer! Bon Appetite♡

    I had these last week and it was sooo delicious. Tweaked the recipe a bit by adding liquid smoke since I couldn’t find smoked paprika. Next time….I’m going to make them into meatballs and figured my way from there.
