*Vegan Tacos*
Vegans can eat Tacos too! LOL when you decide to go vegan that doesnt mean you still cant enjoy some of your favorite dishes. Vegan Tacos are filling and will leave even a meat eater satisfied.
Ingredients:
1-2 cups of Beans of choice (kidney, pinto, refried etc)
1 cup of corn
1/2 cup of fresh diced tomatoes
1 avocado ( or guacamole)
salsa
fresh parsley
vegan gluten free corn tortillas
Guacamole recipe:
1 Avocado
1/2 fresh squeezed lemon juice
1/2 tsp of himalayan pink seasalt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
10 fresh grape tomatoes
1 garlic clove
sprinkle of red pepper flakes
Directions:
1. Warm your corn + beans
2. If choosing to use guacamole place all ingredients inside food processor + process until smooth + sit aside
3. Pre heat pan with olive oil + allow your corn tortillas to simmer on both sides until crisp
4. Remove tortillas + drain oil (I used white paper towel to remove excess oil)
5. Place your beans inside + guacamole or avocado + corn + fresh tomatoes + fresh parsley + salsa
