Nachos use to be one of my favorite foods to eat, but of course I use to slather them in everything unhealthy and more lol. I’m so happy to find a way to eat one of my old favorite meals without all the bad stuff. I absolutely LOVE this “mock” recipe and it takes less than 15 minutes to make! I hope you guys love it too!
*Vegan Nachos* Yields: 1-2 Servings
Late July Jalapeño Lime Tortilla Chips
1 Can Organic Pre-Cooked Black Beans
1 Can Organic Non-Gmo Pre-Cooked Corn
1/4 Cup Diced Tomatoes (I used the whole foods brand that has jalapeño and lime inside)
2-3 Tbs of Heidi Ho Spicy Chia Cheese (Find at Sprouts or Whole foods)
1/4 Cup Pickled Jalapeños (exclude if you don’t like spicy)
1-2 Tbs Salsa
Dash Himalayan Pink Sea Salt + Black Pepper
Optional: Green Scallions and Cilantro
1. Warm your beans + corn + mock cheese on lo/med until warmed
2. Pour your tortilla chips on plate
3. Add your cooked beans + corn + drizzle your cheese + add all toppings
4. Sprinkle himalayan pink sea salt + pepper on top of your avocado
5. Consume right away
